Happy 4th of July!! One of the biggest picnic / camping days (or weekends) of the year! The big question is, are YOU prepared? Do you have a game plan? If your parties are anything like my family, the picnic food is out all day long and everyone just grazes. That's good and bad. It's great because we aren't limited to one large meal; however, when the food is there all day long, it takes some willpower to resist the temptations. So, whether you are hosting a party, attending a party, or maybe going camping with your family for the weekend, it's good to have a plan in place in terms of what the heck you are going to be eating. If you don't have control (aka you are attending a party) then take it upon yourself to BRING a healthy side dish or appetizer. That way you know there is at least SOMETHING that isn't going to leave you feeling full and bloated! I found several of these recipes on the Beachbody blog and they looked so good that I wanted to share!
First up! How adorable is this?!! Start your morning with a little Independence Day breakfast using a slice of whole-grain toast, 2 tsp of Almond (or All Natural Peanut) Butter, 11 fresh blueberries, 12 fresh strawberries, 1/4 medium banana sliced in to 1/2 inch slices. Viola!
Fruit is one of the most simple dishes to take or serve at a party. So, why not make it festive?! All you need is a small star shaped cookie cutter, some fresh blueberries, and watermelon!
Similar in fruit, another festive way to get the kids involved is to make some watermelon and blueberry sparklers! All you need is that small star cookie cutter, fresh blueberries, watermelon, and of course, some wooden skewers. 1/2 medium seedless watermelon, and a pint of blueberries would need 10 skewers).
Shakeology drinkers here is a GREAT one! Shakeology Chia Seed Pudding Parfait!
Ingredients:
- 3 cups nonfat milk (or unsweetened almond milk)
- 1½ scoops Vanilla Shakeology
- 1 Tbsp raw honey
- 1 tsp ground cinnamon
- 6 Tbsp chia seeds
- 1/4 cup fresh blueberries
- 1/4 cup fresh raspberries
- unsweetened coconut flakes (for garnish; optional).
Directions:
- Place milk, Shakeology, honey, and cinnamon in blender; cover. Blend until smooth.
- Pour milk mixture into medium glass bowl. Add chia seeds; mix well.
- Cover bowl; refrigerate for at least 4 hours or overnight, mixing after 2 hours.
- Layer blueberries on top of pudding
- Layer raspberries on top of blueberries
- Garnish with coconut flakes (optional)
Do you have some kids to entertain? I don't know about you, but sugar GREATLY affects my kids! So, the healthier the snack and the "cuter" it looks, the better! Here is a great one from the Gracious Panty!
Ingredients:
- 2 cups plain or Greek yogurt
- 1 cup fresh blueberries
- 1 cup strawberries (de-stemmed and quartered)
- 3 Tbsp Honey
- Popsicle Molds
Directions:
- Blend together 1/2 cup yogurt, 1 cup blueberries and 1 tbsp of honey. Pour in to bottom third of popsicle molds.
- Blend 1 cup yogurt and 1 tbsp honey and poor into second third of popsicle mold.
- Blend 1/2 cup yogurt, 1 cup strawberries, and 1 tbsp honey. Pour into last third of popsicle mold.
- Set in freezer overnight!
**This recipe makes about 10 popsicle's however it truly depends on the mold that you have.

Ingredients:
* 1 pint clean, organic whipping cream or full fat coconut milk
* 3 tbsp. honey
* 1 watermelon
* 1 pint fresh strawberries
* 1 pint fresh blueberries
* I've also see sliced kiwi used too!
Directions:
1. In a large mixing bowl, whip the cream until stiff peaks form.
2. Quickly blend in the honey at the last minute. Do not over beat!
Just beat it for a few seconds to incorporate the honey evenly.
3. Peel the watermelon, leaving it whole. Cut the bottom and top to flatten them.
4. Using a spatula, spread the whip cream over the watermelon, covering it completely.
5. Decorate with berries.
