Healthier Alternative to Super Bowl Appetizers!

Good Morning! We are one day away from Super Bowl Sunday, and here in Central PA we are about one day away from yet another snow storm.  Noooooo!!!!

ANYWAYS, I came across a Beachbody Blog that had soooo many good looking recipes and thought that I would pick a handful to share.  Seriously, my mouth was watering after reading through some of these!!  Who says you need to have junk food during the Superbowl?!! 

Baked Corn Tortilla Chips
Superbowl Appetizers, Party Food Recipes, Homemade Tortilla Chips
Baked Corn Tortilla Chips

Total Time: 20 min. Yield: 10 servings
15 corn tortillas, cut into wedges
Nonstick cooking spray
1 tsp. sea salt (or Himalayan salt)

1. Heat oven to 375° F.
2. Lightly coat both sides of tortillas with spray. Arrange in a single layer on two baking sheets. Bake for 10 to 15 minutes, or until crisp.
3. Sprinkle with salt.

Healthier 7 Layer-Dip

Total Time: 25 min. Yield: 10 servings

7 Layer Dip
2 medium ripe avocados
2 Tbsp. fresh lime juice
1 dash sea salt (or Himalayan salt)
1 dash ground black pepper
8 oz low-fat plain Greek yogurt
2 tsp. all-natural taco seasoning, no salt added
1 (15-oz) can nonfat refried beans, warm
4 medium tomatoes, chopped
1 yellow pepper, chopped
1 bunch green onions, ends trimmed, sliced thin
2 Tbsp. shredded cheddar (or pepper jack) cheese (½ oz)

1. Mash avocados in a medium bowl.
2. Add lime juice, salt, and pepper; mix well. Set aside.
3. Combine yogurt and taco seasoning in a medium bowl; mix well. Set aside.
4. Top serving platter with beans, avocado mixture, yogurt mixture, tomatoes, peppers, green onions, and cheese.
5. Serve with baked tortilla chips.

21 Day Fixers: 1 Green, 1 Yellow, 1/2 Blue/Orange

Spinach Dip

Total Time: 10 min.
Yield: 8 servings, ¼ cup each

10 oz. fresh baby spinach (about 6 cups), steamed until wilted
1½ cups nonfat plain Greek yogurt, drained
3 cloves garlic, finely chopped
¼ cup finely chopped green onions
1 Tbsp. fresh lemon juice
Sea salt and ground black pepper (to taste; optional)
1. Place spinach in colander; drain of all excess water.
2. Finely chop spinach; place in a medium bowl.
3. Add yogurt, garlic, green onions, and lemon juice; mix well.
4. Season with salt and pepper if desired.
5. Refrigerate until ready to serve.

21 Day Fixers: 1 Green  

Pita Pizza

Total Time: 18 min. Yield: 4 servings
4 (6½-inch) whole wheat pitas
¾ cup all-natural spaghetti sauce, no salt added
2 fresh basil leaves, chopped
2 oz. shredded mozzarella cheese (½ cup)
¼ medium onion, sliced
1 medium yellow bell pepper, sliced into rings

1. Preheat oven to 350° F.
2. Top pitas evenly with spaghetti sauce, basil, cheese, onion, and bell pepper.
3. Place pitas on baking sheet. Bake for 10 to 12 minutes, or until cheese is melted.

21 Day Fixers: 1 Green, 1/2 Red, 1 Yellow, 1/2 tsp. 

Almond Crusted Chicken Fingers with Honey Mustard Dipping Sauce

Total Time: 35 min.
Yield: 4 servings

Almond Crusted Chicken Fingers
2 Tbsp. raw honey
2 Tbsp. Dijon mustard
2 tsp. rice wine vinegar
Nonstick cooking spray (or olive oil cooking spray)
2 large eggs
2 Tbsp. water
1 lb. raw chicken breast tenders, skinless
1 cup whole wheat Panko bread crumbs (Japanese-style bread crumbs)
½ cup finely chopped sliced almonds
1 dash tsp. sea salt
1 dash tsp. ground black pepper

1. Combine honey, mustard, and vinegar in a small bowl; mix well. Chill.
2. Preheat oven to 425° F.
3. Line baking sheet with foil; lightly coat with spray.
4. Combine eggs and water in a medium shallow bowl; whisk to blend.
5. Soak chicken in egg mixture for 30 minutes, turning once; set aside.
6. Combine bread crumbs, almonds, salt, and pepper in a large resealable plastic bag; shake to combine.
7. Working with a few pieces at a time, lift chicken from egg mixture, letting excess drip back into bowl, and drop into bag containing bread crumb mixture. Seal bag and shake to coat; repeat with remaining chicken.
8.Place chicken on prepared baking sheet. Bake for 18 to 20 minutes, turning after 10 minutes, until no longer pink in the middle and golden brown.
9. Serve with honey mustard dipping sauce.

21 Day Fixers: 1 Yellow, 1 Red, 1 Blue/Orange

Sweet Potato Skins with Chicken and Spinach

Total Time: 20 min.

Sweet Potato Skins with Chicken and Spinach
Yield: 4 servings

4 baked medium sweet potatoes, cut in half
1 tsp. olive oil
½ tsp. sea salt (or Himalayan salt)
4 oz shredded cooked chicken breast, boneless, skinless
1 tsp. all-natural taco seasoning, no salt added
1 cup steamed spinach
8 Tbsp. low-fat plain Greek yogurt
¼ cup chopped fresh cilantro

1. Heat oven to 400° F.
2. Scoop flesh out of the sweet potatoes and reserve for another use.
3. Place skins on a baking sheet. Brush with oil and sprinkle with salt. Bake for 10 minutes, or until crisp.
4. While skins are baking, combine chicken and taco seasoning in a s mall bowl; mix well. Set aside.
5. Top each sweet potato half evenly with spinach, chicken mixture, yogurt, and cilantro.

21 Day Fixers: 1 1/2 Yellow, 1/2 Red


Total Time: 25 min. Yield: 4 servings

4 corn tortillas, cut into wedges
2 tsp. olive oil
½ medium lime
1 dash chili powder
Sea salt (to taste, optional)
½ cup cooked pinto beans, warm
4 oz cheddar (or jack) cheese, shredded
2 medium tomatoes chopped
½ medium onion, finely chopped
½ medium green bell pepper, chopped
½ medium jalapeno, seeds and veins discarded, finely chopped
¼ medium avocado, chopped
4 fresh cilantro sprigs, chopped
2 Tbsp. nonfat plain Greek yogurt

1. Heat oven to 375° F.
2. Brush both sides of tortillas with oil. Arrange in a single layer on a baking sheet. Bake for 10 to 15 minutes, or until crisp.
3. Squeeze lime over chips. Sprinkle with chili powder and salt (if desired).
4. Arrange half of the tortilla chips in a medium baking dish. Layer with half the beans and cheese. Repeat.
5. Bake chip mixture for 3 to 4 minutes, or until cheese melts.
6. Top with tomatoes, onion, bell pepper, jalapeno, avocado, cilantro, and yogurt.

What DOES a Beachbody Coach REALLY do?! My tips to running a successful business!

Good Afternoon and happy Wednesday!  I don't know about you, but we've got a good bit of snow here in Central PA!  I know it's that time of year, and I really don't mind the snow, but I'm not a fan of feeling like I need to stay in all day due to the cold and travel conditions.  ANYWAYS,  I was having a conversation the other day about Beachbody Coaching and this comment was made "I would never have the time for that!"  So, it got me thinking.  While I am not teaching all day long like in the past, I AM home with two toddler daughters, who, may I add, do not take naps anymore.  Anyone with toddlers knows that that certainly doesn't leave much room for myself throughout the day, let alone sitting at my computer working my Beachbody business!  The most common objection I hear when I talk with someone about giving coaching a try is "I don't have time!"  Let's face it, there are just not enough hours in the day to get EVERYTHING we want to get done!  And believe me, when I was thinking about becoming a Coach, I was saying the SAME THING!  

The truth is, you don't need ALL DAY to run a successful Coaching business!  I'd like to share with you my 3 tips that have been KEY for me in building my business:
1. Have a daily uninterrupted Power Hour!  
2. Be a product of the product!
3. Read or listen to Personal Development! 
4. SHARE don't SELL!

Whether you are a stay at home parent or if you work full time, these 3 tips CAN MOST DEFINITELY be done!  Thousands of Coaches (many of which have 2+ children) are proof of that!  So, let's chat about these tips....

Power Hour
Of course, like anything else, as your business grows and if you want to grow at a quicker rate, you will need a little more time; however, contrary to what most people think, you can begin to build and grow your business with a simple one hour Power Hour each day!  The key is, that Power Hour needs to be a focused, uninterrupted time that you can focus and cross off the tasks on your to-do list.  Your first question may be, When exactly do you have an uninterrupted hour to devote to your business? That's simple!  I use my late evenings as my working hours.  Once I get my girls to sleep and my husband goes to bed, I head to my computer and put in some time.  Fortunately, both of my girls have preschool two mornings a week so I do have a couple of hours each of those mornings; however, I do not have that time during the Summer months, holidays, and days like this week where there are snow days and delays!  So, I honestly don't rely on that time.

Here's the deal,  if you want to build a successful business you are going to have to make some sacrifices.  My sacrifices?  For starters, I don't watch much TV. Actually, I really don't watch any!  Now I'm not saying that you can't watch TV as a coach, but, that just isn't important to me. I'd rather spend that time, even if it is 30 minutes, checking in with my challengers, writing blog posts, reading some personal development, or even getting my daily 30 minute workout in.  Another option?  I get up early!  My girls are typically early rises; however, I do still get up earlier than them to get a few things done. You may be thinking, what exactly do you do during that Power Hour?  Well, it depends!  Right now I am writing a blog post and then will do another check in with my challengers.  These "tasks" that you do during your uninterrupted time are things that you learn when you go through one of my Coach training programs. They are simple steps that will help to ensure that your business is growing.  

Be a Product of the Product

If you are interested in becoming a Coach then you either like the products, or are willing to give them a try.  You really can't expect to be a Coach and help guide people in meeting their health and fitness goals using Beachbody products if you don't use and believe in them yourself!  You better believe I wake up EVERY SINGLE MORNING and make myself a chocolate Shakeology for breakfast.  I wouldn't go without without it! It is an all natural shake that gives me my energy and daily nutrients.  It seriously takes me two minutes tops to make it, so time is certainly not a factor.  And yes, I did make and drink Shakeology in the morning while I was working full time as a teacher too!  In addition, I use Beachbody fitness programs.  I am not a gym goer and quite frankly, I never was!  Having a 30 minute super effective fitness program that will give me fabulous results from the comfort of my own home is DEFINITELY a perk for me.  I don't have to worry about child care and I don't have to go out in the freezing cold, not to mention I'd rather use up 30 minutes for my workout rather than an hour or so with driving time.  Now I do want to say that lots and lots of Coaches do go to a gym.  You are NOT restricted to working out at home as a coach!  Many Coaches who are gym goers use Beachbody products as a supplemental workout or even do it at the gym.

I have to say, one of the perks that I have seen since committing to at home fitness programs, is being a positive role model for my girls. It makes me happy that they CHOOSE to put on their sparkly Sperry shoes and jump around with me during my workout.  No, they don't last the whole time but the words "workout", "healthy", "exercise", "exercise shoes", and "exercise mat" are all part of their vocabulary.  The "I can't workout because of my kids" excuse just doesn't work for me.  I'm proof of that!  Sure, there are times where they may get in my way a little, or even crawl on my while I am doing a plank, but that doesn't prevent me from getting a good sweaty workout in!

I will be the first to admit that yes, I was an elementary teacher, but no, I did not enjoy reading for fun.  My former colleague can vouch for that!  He would tell me about a good book he was reading and I just couldn't fathom going home and reading for fun when I had sooo many other things to do! Crazy, huh?  Fast forward to today and I rarely go a day without it!  Now I will say, I do prefer to listen to personal development because I can do so while driving in the car, working out, and making dinner; however, I do always have some sort of book that I am working on.   I do want to say that this isn't just a recommendation if you are a coach, or thinking about becoming a coach. This is a recommendation that I would give to EVERYONE!  Reading personal development has truly changed my perspective on life.  It has given me loads of confidence and truly positive, optimistic outlook.

Last but not least....SHARE, DON'T SELL!

Ok so I'm sure I can speak for MANY people in saying that when a salesperson is walking towards me in the mall, I avoid eye contact and walk in the other direction!  Something that I love about being a Coach is, while yes, I do have products that I sell, I love to SHARE how I am living a healthy life rather than post 24/7 about busying a particular product from me.  Sure, there may be coaches out there than don't follow this perspective but it is something that I try to really instill in my coaches as well. This, for example, is a post that I had last night.  All I did was share a new yummy recipe that I tried for dinner last night!  (The recipe can be found under the Clean Eating Recipes tab - I HIGHLY recommend it!)  I also like to share my workout pics (like the one above with my girls), not to tell everyone that I am using a Beachbody product, but to show how I am incorporating daily exercise into my busy schedule and hopefully providing some positive motivation for someone out there.

In addition, you don't need some massive office to house products and work your business.  First of all, YOU are your own boss which means you create your own hours!  BONUS!  You don't have to worry about keeping an inventory, directly handing any customer service issues that may come up with the products as far as exchanges or replacements, you don't even have to leave your house!  On the flip side, you can work your business from ANYWHERE you go!  Whether it be chatting with people face to face or simply working from your smart phone, YOU have the control. 
Your success is unlimited and you certainly aren't restricted by the person you sign up under.  As your business builds there is no limit on how much earn which is incredible considering it only costs $15.95 per month to keep your coach membership!  Oh, and to sign up, it's only $39.95; HOWEVER, that fee is easily waived if you invest in a fitness program and Shakeology for YOURSELF to use and consume!

5 Ingredient Chicken Tacos

Simple. Easy. Delicious.
5 Ingredients (plus the taco shells/tortillas) and a Crock Pot is all you need!

Clean Eating, Chicken Tacos, Easy dinners, crock pot meals
Chicken Tacos
  • 4 raw, skinless chicken breasts
  • 2 bell peppers (I used a red and green one)
  • 1 cup natural salsa (no sugar added) 
  • 1 can of black beans, rinsed and drained 
  • 1/2 sweet onion 
  • Hard taco shells or 100% whole wheat tortillas 

  • Place the chicken in the crock pot.
  • Add the salsa.
  • Top with the black beans, peppers, and onions.  
  • Cook on low for 4-6 hours, or until chicken can be pulled apart easily.
  • Serve in hard taco shells or on whole wheat tortillas  
This recipe made enough for leftover too...BONUS!

Who wants a 3 Day Sneak Peek?!

If you follow me on Facebook, you may have noticed that I attended a FABULOUS Beachbody event two weeks ago. Four times a year, thousands of Coaches host a meeting on the same Saturday with the same mission.  During these events,  coaches, potential coaches, and guests get key training tips and learn best business practices.  In addition, we hear about new products and upcoming promotions.  To sum it up, you find out anything and everything that can drive your business forward.  One of the best parts is you get to connect with other Coaches face to face.  We celebrate success, bond with teammates that you otherwise may only associate with via social media, and feed off a collective live energy.

I was lucky enough to attend the January 2015 Pittsburgh Super Saturday Event. It was actually held on Friday due to some corporate representation.  Carl Daikeler, Beachbody CEO, as well as 21 Day Fix trainer, Autumn Calabrese attended and spoke at the event as well! With the new 21 Day Fix Extreme coming out on February 2, 2015, all attendees got a chance to hear Autumn speak about her new program, as well as get a sneak peek of an EXTREME workout!  It was definitely a surreal experience. The energy in the room was incredible!  It is truly amazing to hear the direction that Beachbody is taking from the CEO himself. Some up and coming new products and features that will be happening within the  next few months are amazing!

After the Beachbody event, we spent the rest of the weekend celebrating the fact that the Dram Team was officially ranked the #1 team in the company  for 2014!! How exciting is that?! The benefits of being on this team?  Top notch trainings, access to all sorts of valuable information that move your business forward, access to tips and recommendations from some of the top coaches in the company, and of course, AMAZING team support!

So, I'd like to ask....does this sound like anything you'd be interested in?  I know what you're thinking. I bet I was thinking the same thing.  How can I coach others when I am not in shape myself?  What if I'm not at my goal weight?  I don't know the ins an out of social media! I don't know enough people to make this business work.  I don't want to be a salesperson.  And most common: I DON'T HAVE TIME!!

I am running a 3 DAY SNEAK PEEK group in to what Beachbody Coaching is all about.  It will be an informal, no strings attached group where I will post information about Coaching and how I have made it work for me!  You will hear the process of what exactly Coaches do, success stories, logistics like how you make money, how you share vs sell and have plenty of opportunities to get all of your questions answered.  Let's face it, Beachbody Coaching isn't for everyone.  So, why not learn for yourself in a commitment-free group? I have to say, when I decided to become an actively working coach, I was very nervous.  I had those fears and doubts just like everyone else.  I was concerned that people would look at me and run the other way because I sell health and fitness products but guess what?  They didn't!  And you know what else?  I wasn't, and am not "that girl" who was/is trying to sell sell sell!   What I AM doing is sharing how I am living a happy, healthy life and how I am incorporating that into my family.  It's my experiences, my trials and errors, my research, and my thoughts!  No, I'm not at expert! I am someone who has a goal to pay it forward and help others gain their confidence and good  health back. 

So, if you have that gut feeling that maybe this is something you'd like to try,  then why not at least learn about it?!  The worst that can happen is you find out that it's not a good fit for you. And that's OK! At least you were willing to step out of your comfort zone and hear more about it.  Whether you are interested in helping others, making a supplemental income, or even turning this in to a full time career, it's good to get those questions out of the way.

What is the 21 Day Fix EXTREME?!

Every since the big news was revealed in September, there has been a HUGE hype around Autumn Calabrese's new program, the 21 Day Fix Extreme.  I swear the day I posted about it on my Facebook page I got tons of messages wanting more info.  Well, the time has finally come.  Not only do I have more info, but, this program will be released in exactly 2 WEEKS!!

So, before I get in to the details, let me give you a little background about what exactly the 21 Day Fix is.  Autumn Calabrese created the 21 Day Fix, which was launched in February 2014.  Unexpectedly, it sold out within a couple of days and didn't stop there.  It continued to be a huge hit and is currently the #1 selling home fitness program!  So you may be thinking, what's so special about it?  The concept of the program is very appealing.  For starters, it's only 21 days long!  It's a lot easier to get physically and mentally prepared to push yourself for 21 days  In addition, the 21 Day Fix comes with 30 minute total body workouts (no more time excuse!) and an easy to follow nutrition guide using color coded portion control containers.  When results were released they were nothing short of AMAZING!  For me, the 21 Day Fix was a game changer.  Yes, I was aware of how to eat healthy but the missing component for me was the portion sizes.  I was totally overeating on healthy food and didn't realize how that was, and can, effect your results.  So, since February 2014, the 21 Day Fix has also been a top seller for me.  The results of my challengers have been AMAZING!  They can now "eyeball" their portion sizes and are more conscious of what healthy foods are.  Like other 21 Day fixers, their results have been amazing as well!

I had the pleasure of attending a Beachbody event last weekend where Autumn Calabrese herself was there!  She spent some time speaking about her new program, explaining what it is all about, and giving us a sneak peek workout!  I got so excited just by hearing about the different options!  The 21 Day Fix Extreme is going to have a "tightened up" nutrition plan (you aren't going to see chocolate and wine in this one), and more advanced workouts that are going to give you  more muscle tone and definition.  In addition, there are going to be 2 separate nutrition plans that you can choose from.  The first will be a 21 Day Fix Extreme plan, and then she is also going to share her 21 day competition meal plan that is going to get you "shredded," eliminating those extra pounds for good! It is 100% clean eating for 21 days!  And yes, you will get the fancy portion control containers with this one too!

Insanity Max 30: Month 2 Has Begun!

 Ok so let me start by saying that I have been the WORST blogger this past week!  I always shoot for 3 or so posts a week and I haven't done ANY!  After being so busy last week, having my husband out of town, running 4 health and fitness accountability groups, and just life in general, things have been a little crazy!  In the midst of all of this, I graduated from Month 1 of Insanity Max 30 and have officially gotten a week of Month 2 under my belt!  When Beachbody came out with the 21 Day Fx, it seemed like 60 day programs were just soooo long!  In fact, a lot of my former 21 Day Fixers who moved on to new programs were hesitant because 60 days seems like such a long time.  The key is taking it a day at a time.  Heck I have challengers who are on round 4, 5 and 6 of the 21 Day Fix but haven't put it in perspective at just how many days that has been!  I honestly can not believe I am only 3 weeks away from being an Insanity Max 30 graduate!  You better believe I am going to submit results and get my free Max 30 T-Shirt! 

On a side note, a little gift I bought myself for finishing Month 1 is a new pair of workouts shoes! Something I always post about in my challenge groups is to reward yourself with something (other than food) for completing a program.  My reward came a little early :)

ANYWAYS, I wanted to give a little update on how things are going, my thoughts on the program, and my progress.  Let's start with my meal plan that I have been following through the past week (I'm still working on my current plan for this week).

With my hubby away for a couple of nights, I did do some repeat dinners. I have to say, since starting Insanity Max 30 I have felt a bit hungrier so, if my evening Green Tea doesn't cut it, I sometimes add in 1/2 of a Shakeology. It does the trick perfectly, plus, it's just an extra dose of nutrients as compared to something full of fat, calories, and sugar.  I get asked A LOT about how Shakeology is different from any other shake.  If you've done your research at all, then you know that Shakeology is one of the more expensive shakes out there.  Having said that, you have to remember to compare apples to apples.  What I mean is, if you are going to invest in a different type of shake to drink "because it's cheaper," you really need to break down the ingredients and see if it is worth it.  I mean honestly, why drink a shake as a meal replacement if it really isn't fueling your body with proper nutrition?  When it comes down to is, Shakeology costs $4.40 per meal, per day.   Even better, with a preferred customer discount it only costs $3.32 per day!  Now really, where in the world are you going to get  a supercharged, all natural, delicious meal that is full of your daily dose of nutrients? Now let's think about that....how many of you frequently go out to (or order out) lunch while you are at work?  Even if you stuck with something on the healthier side, like a chicken salad, I'm pretty sure you'd be paying much more.  For me, having something as healthy as Shakeology is such a time saver and convenience.  I honestly take no more than 2 minutes each morning to blend up my shake and have it ready to go. It's that one meal that I don't have to plan out or think about each day.  

So let's move on to the Month 2 Workouts:

 Shaun T sure did move it up a notch in Month 2!  My "Max Out" times for Month 1 were greatly improving and I was super proud for pushing my self to max out a little further each day.  Then came Month 2!  While I did push myself in every workout, my "Max Out" times were certainly much lower than month one.  And you know what? That's OK!  I've got a whole new soreness with these workouts and I am feeling great!  So, let me explain a bit about the workouts...

Max Out Cardio: This is a crazy cardio workout that works your ENTIRE body from head to toe!
Max Out Power: This is a Tabata Style workout however Shaun T does extend the time a bit.  It is 45 seconds on and 15 seconds off!  
Max Out Sweat:  This workout certainly lives up to its name.  I was a sweaty mess when it was over!
Mac Out Strength: This is another Tabata style workout that works your arms, shoulders, chest, and core.  
Fright Fight: Round 2:  WOW! That's about all I have to say about that!  This is seriously the toughest workout I've ever done! Check out the video below for a sneak peek!

 Overall I am feeling GREAT! As for my results, I am happy to be down 3 pounds and 2.5 inches!  I had a few slip ups over the holidays and am now fully committed to Month 2!

So,  as I head in to my second week of Month 2, I am getting my meal plan ready (and will share on my Facebook page), scheduling out when I am going to get my workouts in each day this week, and staying tuned in with all of my challenge groups to provide that support, motivation, and accountability to help them stay on track too!!  

So I want to ask, WHY NOT YOU?!  I am a busy working mom who could easily create a million excuses as to why I don't have time to exercise and eat healthy.  Sure, it would be easier to grab a processed dinner or a bag of chips to snack on.  It would absolutely be easier to skip out on my workouts due to our crazy schedules.  BUT, that won't get me any closer to reaching my goals.  That won't make me feel energized, confident, and ready to take on each day.  That won't give my daughters a positive role model and teach them to make healthy choices.  That will only leave me feeling tired, miserable, and have a lack of energy that I can not afford with having two toddlers.  The key is in the planning and prep.  Taking the time today to plan out my meals, go grocery shopping, and prep what I can will ensure that my week will run as smoothly as possible. These are the types of things that I help with in my accountability groups!  No one is alone in this process and full support is provided to help you succeed!

Slow Cooker Chicken and Rice Soup

Here in Central PA it is COLD and SNOWY!  So, what better dinner than to have a nice warm bowl of soup?! Better yet, how about a recipe that you can just throw in the crock pot in the morning and have ready for when you get home from work?! I found a Chicken Rice recipe online and make a couple of tweaks to it.  It was delicious! My girls really enjoyed it as well!

  • 1 1/2 half to 2 pounds of boneless, skinless chicken breasts
  • 1 medium onion
  • 1 cup carrots (chopped)
  • 4 stalks of celery
  • 2 cloves of garlic, chopped
  • 1 1/2 cups uncooked brown rice
  • 2 bay leaves
  • 1/2 tsp dried thyme
  • 10 cups of low sodium chicken broth
  • 1/4 cup chopped fresh parsley (garnish)
  • Salt and Black pepper to taste

  1. Combine onion, carrots, celery, garlic, rice, bay leaves, thyme, salt, and pepper in slow cooker.
  2. Top with chicken breast halves.
  3. Add chicken broth.
  4. Cover and cook on low setting for 6 to 6 1/2 hours or on high for about 3 1/2-4 hours.
  5. Remove chicken and shred then return to the slow cooker.  While you have the chicken out, remove the bay leaves as well.
  6. Stir soup, add parsley, and serve!

Week 3 Insanity Max 30 - Progress Update!

Happy Monday!!!  I haven't been the best blogger lately being that it's been a week since I'm posted anything!  With my girls home from school and the final craziness of the holidays, my schedule just got a bit overloaded.  That doesn't mean; however, that I wasn't able to stay on track with my health and fitness.  Ok so now that the holidays are REALLY over, let's get down to business!  I had a slight slip up the week of Christmas. While I stayed on track fairly well, I did miss a couple of workouts and in general, I just felt like I needed a do over on Week 3 of Insanity Max 30.  I didn't feel comfortable moving on, so as of yesterday, I officially completed a solid third week!  Today begins Week 4 for me and I am more motivated than ever! I am running and participating in an exclusive Insanity Max 30 group and am loving it! The support, accountability, and motivation among each other is fantastic and it really helps to keep me going! I ended 2014 feeling strong and am starting off 2015 feeling confident and determined!

Let's talk nutrition first.....  Last week I did A LOT of eating out as far as my dinners go.  Between begin out of town, eating out for New Year's Eve, a New Year dinner at my sister in laws and some weekend activities, things were a bit crazy to say the least.  I knew it was going to be crazy and I did have a plan in place.  I was able to stay on track and enjoy 2 cheat meals rather than 1 for the week, which I was fine with.  So, here's to starting off 2015 and Week 4 of Insanity Max 30 right! My meal plan has been shared with my groups, has been printed out, and is sitting on my kitchen counter!
As a creature of habit, I am sticking with my typical Shakeology breakfast.  I'm not sure I can go a day without it!  It's like morning coffee to me (except that I don't drink coffee!).  Shakeology truly helps me start off my day right.  It gives me energy, provides me with my daily dose of nutrients, and of course, tastes delicious!  Who wouldn't love a chocolate shake in the morning.....that's healthy?!!!  Anyways, I did incorporate some chicken salads pretty frequently throughout the week.  Although I do love making and eating nice big salads, I have to admit, the reason why I am eating so much salad is because we have a lot of lettuce left over from last week!  I don't let healthy things go to waste ;)  In addition, I am trying out a few new recipes this week, beginning tonight with some Italian Baked Chicken! I will definitely keep you posted on how the new recipes go.

As for the Insanity Max 30 Workouts, I can certainly feel a difference!  This workout has really made me dig deeper and push to my max.  I've realized that with other workouts as soon as I would get tired I'd break for a quick drink.  With Max 30 I feel motivated to push a little further and see how far I can physically and mentally go before I "max out." 

insanity Max 30 Meal Plan, 21 Day Fix Meal Plan, Fitness Motivatino, Insanity Max 30Week 3 brought on a new workout called Tabata Strength.  It has the same concept as Tabata Power in that you do 20 seconds on and 10 seconds off.  I love the Tabata workouts because those 10 seconds off GREATLY help! Tabata Strength is definitely one of my favorite workouts with Max 30.  The last half really works on your upper body, which is something that I need! There are lots of push up / tricep type moves that can definitely be modified.

 My max out times have definitely increased as well! 
Cardio Challenge: Week 1 I maxed out at 8:01 and Week 3 was 9:00
Tabata Strength: First workout I maxed out at 20:00 and when I did the workout again two days later I maxed out at 25:08
Sweat Intervals: Week 1: 6:40  Week 3: 7:47
Friday Night Fight Round 1: Week 1: 7:55  Week 3: 9:00

So, overall, I am definitely seeing an improvement!  I've been talking on and off with several people about Insanity Max 30 and there seems to be one big "turn off" with this program.

1.  It's too hard.  Let me start with saying that I was terrified to do this program.  I CLEARLY remember my Insanity days and how I felt like I was going to fall over throughout the workouts.  First of all, Insanity Max 30 is only 30 minutes (hence the name).  Secondly, unlike Insanity, there is a modifier in every workout!  You better believe that I follow the modifier pretty frequently!  He/she drastically reduces the amount of jumping impact with several of the moves.  You can even opt to watch a modifier track so that you can see him/her through the entire workout. Trust me when I say that you will still get fabulous results if you follow the modifier.

For this reason, I honestly would recommend Insanity Max 30 for anyone!  Yes, it may push you a bit more than you are used to; however, it is totally worth it!
