Creamy Chicken Salad with Honey Mustard Dressing

Here you have it! Another Fixate Cookbook recipe!  I tried the Creamy Chicken Salad with Honey Mustard dressing and it was delicious!  It would make for a great lunch or dinner! Give it a try and let me know your thoughts!



The following ingredients make about 4 servings with 1 1/4 cup per serving.  The color coded portion control container count is 2 green, 1/2 purple, 1 red, 1/2 blue, and 1/2 orange

Ingredients:
Creamy Chicken Salad, Chicken Salad, Fixate Cookbook, 21 Day Fix Cookbook, 21 Day Fix Meals, Healthy Salad Recipes, Successfully Fit, Lisa Decker
Creamy Chicken Salad
  • 3 cups chopped rotisserie chicken breast (boneless / skinless)
  • 1/2 cup chopped green apple
  • 1/2 cup seedless red grapes, cut in half
  • 1/2 cup raw almonds
  • 2 green onions, sliced
  • 2 Tbsp chopped fresh tarragon
  • 1/4 cup Honey Mustard Dressing (see below)
  • 8 cups shredded romaine lettuce
Directions:
  1. Combine chicken, apple, grapes, almonds, green onions, tarragon, and Honey Mustard Salad Dressing in a large bowl.  Mix well and then refrigerate (covered) for 2 hours.
  2. Serve 1 1/4 cup Creamy Chicken Salad over 2 cups of romaine lettuce per serving.  

Honey Mustard Dressing:
** Serves 8 with 2 Tbsp per serving
** 1 Orange Container
  • 1/2 cup reduced fat plain Greek yogurt
  • 3 Tbsp Dijon mustard, gluten-free
  • 3 Tbsp raw honey
  • 3 Tbsp rice vinegar
  • 1/4 cup extra-virgin olive oil
  • Sea Salt to taste (optional) 
Directions: Combine yogurt, mustard, honey, and vinegar in a medium bowl and mix well. Slowly add the oil, whisking constantly until well blended.

Good Wednesday Morning!!  Boy do I have a lot to share with you today! So, it's been just over one week since I started Shaun T's newest home fitness program, CIZE, and I am LOVING it!  I'll be honest, last April when I first heard this new program was coming out, I was a bit hesitant.  Sure, I like to dance, but would it REALLY get me a good workout?  I trusted my gut, which told me that Shaun T would NEVER release anything that would be a waste of time or give a lack of results, so, there really wasn't any question of whether or not I would purchase it.

 Fast forward three months where just over a week ago I was at a huge Coach Conference called Coach Summit, where I had the opportunity to do a LIVE CIZE workout with Shaun T himself.  Ok, so I have to admit, it was the group of lovely ladies I was with that REALLY wanted to do Cize. I actually preferred to register for a different workout but figured I'd go with my group and sign up.  I have to say, it was probably one of my best decisions of that entire trip! First of all, the energy was indescribable!  Secondly, I was DRIPPING in sweat!!  I couldn't believe that DANCING for 30 minutes would be such a GREAT workout!  In fact, I woke up sore the next morning, which is a sign that the workout certainly did it's job!  Needless to say I was pretty excited to come home and get started with the program.

So, here I am in the middle of Week 2 and truly enjoying this new type of exercise!  I seriously look forward to my workout every day!  So here's the thing... Often times I hear people say that they can't workout because of their kids.  They HAVE to go to a gym or they just can't make themselves a priority because they don't have time.  I get it!! I used to say the SAME THING (well, not the gym part)!  I started doing home fitness programs when my daughters were 1 and 3 years old.  Yes, they ran around me. Yes, they tried to crawl on my back while doing push ups. But guess what? They LEARNED that Mommy was going to be exercising every day.  And they LEARNED that they were not suppose to be jumping all over me.  And you know what?  They eventually started to jump right in with me!  No, they don't work out with me EVERY SINGLE DAY. But they ARE  in the same room as me!  Cize has taken that to a whole new level!  The music is great and my 5 year old actually asked me if what I was doing was really "exercising!" 


So, when I told her that this was a new type of exercise and that it was really fun, she decided to join in with me!  Below is a workout called Crazy 8's.  It was Day 2 of the program.

What started to happen throughout the week was she was actually asking ME when we were going to dance! How cute is that?! And then what eventually happened by the beginning of Week 2, my 3 year old decided to jump in and give it a try as well! (That video will be on my Week 2 progress update!)

If you have experience with the 21 Day Fix, 21 Day Fix Extreme, or Insanity Max 30, then the meal planning component will be familiar to you. If you DON'T have experience, then let me briefly explain.  Cize comes with a color coded portion control plan where you are provided with food lists for each type of nutrient. You can use the color coded containers if you have them from a program mentioned above; however, you do not need them.  Your diet consists of fruits, vegetables,
carbs, proteins, healthy fats, seed/oils, and nut butters.  You are provided with food lists, which are ordered in nutritional value, and you are free to select which foods you would like to eat.  The serving size is listed next to each food so there is no question or confusion as to how much you should be eating. Below is a video that I created for my Cize Test Group.  I go through the entire "Eat Up" eating plan book that comes with the program and provide some meal planning tips for getting started.  There is a unique "meal builder" section at the end of the book that gives you TONS of ideas for grilling, making omelets, salads, wraps, stir fry, oatmeal, and a lot more!  Check out the video for more info on that!


So what DOES a Cize Meal Plan look like? It looks pretty similar to my other plans because there is no trick to eating healthy!  It really doesn't change much from one program to the next! As always, I incorporate my Shakeology for breakfast daily.  My Shakeology ensures that I am getting my daily dose of nutrients and it provides me with natural energy and of course, curbs my cravings! I love having a morning "chocolate fix"!

It has 101 healthy recipes, many of which are kid-friendly, Paleo, vegan, vegetarian, and gluten free!  Well, this cookbook goes RIGHT IN LINE WITH CIZE and it's color coded portion control system! 
No, it does not come with the program. It is something you would need to purchase separately.

 Of all of the recipes we could have tried first, we picked BROWNIES!!  They were actually Flourless Chocolate Brownies!  The girls LOVED them, which was great because I didn't feel guilty about giving some to them.

An Incredible Journey....Beachbody Summit Recap

I have been meaning to write a post about this topic since Monday but have had some trouble getting my thoughts together!   Last week I had the opportunity to attend the 2015 Beachbody Coach Summit in Nashville, Tennessee with about 25,000 other Coaches.  Summit is a chance for participating Coaches to come together for top-notch training, celebration, celebrity workouts, and so much more! Last year I attended Summit as an Emerald Coach (which is your first rank of building your team).  At the time, I had a few Coaches who signed up under me; however, none of them were really "working the business."  They were mainly reaping the benefit of the Coach discount, which it totally fine.  I decided to make the investment in going last year regardless because although I was not at the leadership level yet, I knew that was where I wanted to be.  I wasn't sure HOW I was going to get there, but I was determined.

This past year has been a whirlwind for me.  I have not only been able to build a large team of Coaches, but I have stepped in to the leadership ladder as a Star Diamond Coach.  That means some of my personal Coaches are stepping into that leadership role as well!  In addition to being a Star Diamond Coach, I even had the opportunity to walk across the stage (at LP Stadium!!) in front of 25,000 Coaches for Star Diamond recognition.  Whew! What an experience that was!! 
To look at where I, as well as my Coaches are from the end of Summit last year to right now is just incredible. Most of them weren't even Coaches last year!  It's crazy how social media works.  I have built so many friendships along the way with ladies that I have never even physically met.  It's strange trying to explain to your husband that you are excited to fly to Nashville and to meet and room with people that I have only communicated with online!  What's even crazier is how well we all seemed to "click."

Aside from my "roomies" for the week, I was also able to connect with some other Coaches on our main large team.  I was particularly excited at the fact that I had 2 of my personally sponsored Coaches attend Summit with me this year! I seriously feel like I have known these girls forever and that we were just old friends getting together.  My goals is to triple this number and have 6 Coaches attend next year! We all got to attend the Success Club party, which was something that we had to qualify for based on our Success in May and June.  It was a fun experience eating southern food and listening to some great country bands! The heat....not so much fun. It's HOT in Nashville!

 Ok so what exactly DID we go at Summit?

Let's start with the Workouts!  We were able to choose 1 workout on Thursday and 1 workout on Friday. So, we went with Chalene Johnson's PiYO and then of course, Shaun T's new CIZE workout!  They were both INCREDIBLE! I can not even BEGIN to describe the energy levels while you are doing a live workout with a celebrity trainer!  And by the way, CIZE was SOOOO much fun!!!

On the final day of Summit, Beachbody SHUT DOWN Broadway, which is kinda like the main drag of Nashville, just so that all 25,000 Coaches could work out together with ALL of the trainers!! Each trainer got about 10 minutes or so each so it was quite a long, hot, and sweaty workout!  Yes, we even made the local news!!   This was one of the main events that I was looking forward to and it certainly lived up to my expectations!

We also had the opportunity to listen to some pretty incredible speakers during the general session trainings.  Simon Sinek, author and inspirational leader spoke to us the first day as well as Chalene Johnson.  Both had amazing experiences and tips on leadership and relationships.  On the second day National Geographic Photographer Dewitt Jones spoke and boy was his presentation AMAZING. It was probably one of the main highlights of my entire trip. He spoke a lot about seeing different perspectives and how important that can be in order to transform your life.  He said to EMBRACE change, rather than FEAR it.  One of the powerful comments that I had written down at the end was "I see it, because I believe it."  Instead of complaining about what's wrong, focus on what's right!  Words to live to by!!!

Aside from the guest speakers we also had some very helpful business trainings with some of the top Coaches in the network.  I think I have almost half of a notebook FULL of notes!!  I am slowly but surely decompressing and getting my thoughts and plans together so that I can continue to build my business and lead my challengers.  

Of course, it wasn't all filled with workouts and trainings!  There were "Shakeology bars" everywhere, HUGE 21 Day Fix containers, and of course, the well known CORE, which is a HUGE Beachbody store that contains the latest apparel and products that only the Coaches who are at Summit get to see...and buy!!

The final night of Summit consisted of a HUGE celebration. I have to tell you, Beachbody pulls out ALL OF THE STOPS when it comes to Coach appreciation!  Reserved seating, recognition, parties, it's just never ending! Another highlight of my trip was of course, the Beachbody Challenge winner.  THIS is what it's all about. The parties, connections, friendships...sure, they are all great; but, seeing these Beachbody Challenge contestants on stage being recognized for their OUT OF THIS WORLD transformations is probably the most inspiring thing I have ever seen. They were awarded with $25,000 and the top voted male and female won $100,000!!!  I had chills and tears in my eyes when the winner was announced.

Last but certainly not least, there was the top Coach celebration.  I am honored and grateful to be on the 2014 Top Coach's team and was more than happy to celebrate with her on stage, even if that meant dancing on stage!  YIKES!   Seriously though, we have such an incredible team of Coaches led by a phenomenal leader who is clearly teaching her Coaches just what it takes to be successful. It was a GREAT way to end Summit, along with the fireworks finale!


Seriously guys, I am just a former sixth grade teacher who decided to stop complaining about her job and to do something about it. I decided to take a risk so that I could be home more with my daughters and I absolutely FELL IN LOVE with Coaching. I can not begin to tell you how rewarding and fulfilling it is to hear the successes of my challengers and now my Coaches. Pant sizes being dropped, families getting healthier, financial goals being met.....it's just incredible!

Flourless Chocolate Brownies

 
I got a chance to try my first recipe from the Fixate cookbook today! Of course, it was a dessert recipe!  Now, before you look at the ingredients and turn your nose up let me tell you, I did JUST THAT a few months ago!  I remember a friend of mine posting a similar recipe and I had the same face you are probably going to have here in a few seconds.  As a result, I never gave them a try.  I was surprised to see them in Fixate and since I had the ingredients, I figured I'd just give them a try!  

Both my 3 and 5 year old daughters LOVED them, and so did my hubby! In fact, my girls helped me make them!   I encourage YOU to give them a try! Let me know what you think! 

For those following the color coded portion control plan like the 21 Day Fix, 21 Day Fix Extreme, Insanity Max 30, or Cize, this would be considered 1 YELLOW CONTAINER. 
 


Ingredients:
Flourless Chocolate Chickpea Brownies, Flourless Chocolate Brownies, Healthy Dessert, 21 Day Fix Approved Treats, Healthy Brownie Recipe
Flourless Chocolate Chickpea Brownies
  • Nonstick cooking spray and 8x8 inch pan
  • 1 (15 oz) can chickpeas (garbanzo beans), drained and rinsed
  • 1/4 cup organic butter, melted (or extra-virgin organic coconut oil)
  • 2 large eggs
  • 1/2 cup pure maple syrup (or raw honey)
  • 2 tsp pure vanilla extract
  • 1/3 cup organic unsweetened cocoa powder
  • 1/2 tsp baking powder (gluten free)
  • 1 pinch sea salt (or Himalayan salt)
  • 1/4 cup semi-sweet (or dark) chocolate chips
Directions:
  1. Preheat over to 350 degrees F.
  2. Line 9x9 OR 8x8 inch baking pan with parchment paper. Lightly coat with spray and set aside.
  3. Place chickpeas, butter, eggs, maple syrup, extract, cocoa powder, baking powder, and salt in blender or food processor.  Cover and blend until smooth
  4. Add chocolate chips and mix by hand until blended.
  5. Evenly spread batter into prepared pan.
  6. Bake for 25-28 minutes or until toothpick inserted into the center comes out clean. 
  7. Cut in to 16 squares. 
Serving Size = 1 brownie 

**Side note....I didn't have any butter so I went with the coconut oil.  It did give the brownies a bit of a coconut taste.

Happy Wednesday! The latest buzz in the home fitness world is that Shaun T is coming out with another NEW workout!  Seriously, this man is AMAZING! He launched Focus T25 about two years ago, then top selling Insanity Max 30 came out in December 2014, and now, CIZE is DAYS from it’s release!  So, what is this CIZE all about?



Well, if I’m being honest, there aren’t A TON of details yet, including the price, but, I am going to share with you everything that I know as well as how you can score a spot in my exclusive CIZE IT UP online test group (see below for details)!!

The tag line with this program is that Cize is the “end of exercise.”  Why?  Because it is!  Cize is a true dance like program that will get your heart pumping and the sweating dripping.  I personally have access to one workout and let me tell you, it is AWESOME!  Throughout the program you learn a little choreographed dance and by the end, Shaun T pairs it up with a current top pop hit, which makes it even more fun!



Now, before you turn your head thinking, “I can’t dance” let me tell you, YOU WILL LEARN!  Yea, you may look a little silly at first but it’s such a fun way to get a good workout in.  So, if you are someone who doesn’t care for the weights, burpees, push ups, and other traditional exercise moves, then this program is for you!  If you are someone who is in need of a change and wants to have a good time, then this workout is for you too!



The workouts with Cize range from 30-40 minutes and that time flies right by!  In addition, the program is 4 weeks long!  I have been so used to 25-30 minute workouts that I was a bit bummed out to see that the Cize workout that I have access to is 40 minutes.  I have a 3 and 5 year old at home while I work out so anything over 30 minutes is a struggle. BUT, I have to say, that 40 minutes went SUPER quick!!  And actually, it was such a fun upbeat workout that my daughters danced around with me!  And they may have laughed at me a little too!

The nutrition plan uses a color-coded portion control system, similar to the 21 Day Fix.  So you will learn WHAT you should be eating, WHEN you should be eating, and HOW MUCH you should be eating!  Simple as that!  If you don’t already know this, nutrition is 80% of your success when it comes to getting healthy and losing weight, so, having access to a plan that will guide you in that direction is a huge benefit. 



Like I said above, I do not have the details on pricing yet but if the rumors that I am hearing are true, then it’s going to be a great deal! Plus, typically when a new program is released it’s at a limited time discount price….BONUS!

On Monday July 27th,  I am hosting a CIZE IT UP test group and YOU are invited!  Throughout the 5 week group we will spend one week with planning and prep. Back on Track! 21 Day Fix Extreme Workouts and Meal Plan

Happy Sunday!!  I don't know about you, but my Summer has been crazy busy!  I noticed that it's been a little while since I did a progress update on the current program I am doing, The 21 Day Fix Extreme, and figured I would do one today!  If you follow me at all then you know I am completely IN LOVE with the 21 Day Fix and 21 Day Fix Extreme programs. I was so excited when they went on sale in June and ecstatic when I discovered the discounted price was going to continue through July. Seriously, this is one of the best investments you could possibly make when it comes to your health and fitness!  ANYWAYS, if you aren't familiar with this popular program, it is both a nutritional and fitness program.  It comes with these cool color coded portion control containers as well as a list of NORMAL foods for each container.  The concept is, if it fits in the container you can eat it!   Simple as that! So, here is a plan that I followed this past week, which includes all 21 Day Fix approved meals / snacks.

Shakeology is a natural meal replacement shake that includes your daily dose of nutrients.  It has the proper carb to protein ratio that will keep you feeling fuller, longer.  Aside from the health benefits, it has truly helped with my energy as well as curbing my cravings.  Something that I hear A LOT is "I don't want to drink a meal."  Believe me, I TOTALLY get it!  BUT, if you take look at my meal plan, you will see that it is such a small portion of my day! I personally drink mine for breakfast each morning and then a few hours later I eat a more "typical" breakfast like eggs or oatmeal.  And actually, if you really didn't want to have shakeology for a meal, you could use it as a snack too! 


Ok let's talk workouts!  I have been faithfully sticking to the 21 Day Fix Extreme workouts. I really love them because they are intense, yet not so intense that I can barely make it through.  I also love that the workouts incorporate weights and a resistance band (for some). I feel like I see the biggest difference in my body when I incorporate weights so I highly recommend giving it a try!

I used to get up early in the morning to get my workout in but for months I've been waiting until late morning while my girls are up.  Why?  For starters, I like to get other things done early while my girls are sleeping.  Second, I like them SEEING me exercise! Yes, when I first started doing this they ran around me, jumped on my while I was doing push ups, and were just crazy!  Now, they know it's a part of my day. Often times they look at the screen and try to do the workout with me (their version of course)!

21 Day Fix FIXATE Cookbook GIVEAWAY

Happy Monday!  How is everyone feeling after this holiday weekend? I know there are TONS of 21 Day Fixers out there so I thought I'd so a post about the new FIXATE Cookbook that is coming out in just about a week!  No, this isn't just for people doing the 21 Day Fix.

Kid-Friendly Recipes
I have to admit, cooking was NOT my thing for many many years.  Believe it or not, my family actually has a very successful homemade Italian Restaurant and I've got a family of AMAZING cooks, yet, I always dreaded planning and making dinner. It wasn't until I sucked it up and actually taught myself a thing or two!  It's really not that bad!  And it's not that hard either! That's one thing I LOVE about the 21 Day Fix program. It truly is simple nutrition. Nothing fancy and nothing very difficult or time consuming.  I also love that Fixate has some kid-friendly recipes too!

Healthy and Festive 4th of July Recipes

Happy 4th of July!!  One of the biggest picnic / camping days (or weekends) of the year!  The big question is, are YOU prepared?  Do you have a game plan?  If your parties are anything like my family, the picnic food is out all day long and everyone just grazes.  That's good and bad.   It's great because we aren't limited to one large meal; however, when the food is there all day long, it takes some willpower to resist the temptations.  So, whether you are hosting a party, attending a party, or maybe going camping with your family for the weekend, it's good to have a plan in place in terms of what the heck you are going to be eating.  If you don't have control (aka you are attending a party) then take it upon yourself to BRING a healthy side dish or appetizer.   That way you know there is at least SOMETHING that isn't going to leave you feeling full and bloated! I found several of these recipes on the Beachbody  blog and they looked so good that I wanted to share!


First up! How adorable is this?!!  Start your morning with a little Independence Day breakfast using a slice of whole-grain toast, 2 tsp of Almond (or All Natural Peanut) Butter, 11 fresh blueberries, 12 fresh strawberries, 1/4 medium banana sliced in to 1/2 inch slices. Viola!

Fruit is one of the most simple dishes to take or serve at a party.  So, why not make it festive?!  All you need is a small star shaped cookie cutter, some fresh blueberries, and watermelon!

Similar in fruit, another festive way to get the kids involved is to make some watermelon and blueberry sparklers!  All you need is that small star cookie cutter, fresh blueberries, watermelon, and of course, some wooden skewers.  1/2 medium seedless watermelon, and a pint of blueberries would need 10 skewers).

Ingredients:
  • 3 cups nonfat milk (or unsweetened almond milk)
  • 1½ scoops Vanilla Shakeology
  • 1 Tbsp raw honey
  • 1 tsp ground cinnamon
  • 6 Tbsp chia seeds
  • 1/4 cup fresh blueberries
  • 1/4 cup fresh raspberries
  • unsweetened coconut flakes (for garnish; optional). 

Directions: 
  1. Place milk, Shakeology, honey, and cinnamon in blender; cover. Blend until smooth.
  2. Pour milk mixture into medium glass bowl. Add chia seeds; mix well.
  3. Cover bowl; refrigerate for at least 4 hours or overnight, mixing after 2 hours.
  4. Layer blueberries on top of pudding
  5. Layer raspberries on top of blueberries
  6. Garnish with coconut flakes (optional)



Do you have some kids to entertain?  I don't know about you, but sugar GREATLY affects my kids! So, the healthier the snack and the "cuter" it looks, the better! Here is a great one from the Gracious Panty!

  • 2 cups plain or Greek yogurt
  • 1 cup fresh blueberries
  • 1 cup strawberries (de-stemmed and quartered)
  • 3 Tbsp Honey
  • Popsicle Molds 

Directions: 
  1. Blend together 1/2 cup yogurt, 1 cup blueberries and 1 tbsp of honey. Pour in to bottom third of popsicle molds.
  2. Blend 1 cup yogurt and 1 tbsp honey and poor into second third of popsicle mold.
  3. Blend 1/2 cup yogurt, 1 cup strawberries, and 1 tbsp honey.  Pour into last third of popsicle mold.  
  4. Set in freezer overnight!  
**This recipe makes about 10 popsicle's however it truly depends on the mold that you have.

Watermelon Cake
Ingredients:
* 1 pint clean, organic whipping cream or full fat coconut milk
* 3 tbsp. honey
* 1 watermelon
* 1 pint fresh strawberries
* 1 pint fresh blueberries
* I've also see sliced kiwi used too!
 
Directions:
1. In a large mixing bowl, whip the cream until stiff peaks form.
2. Quickly blend in the honey at the last minute.  Do not over beat!  Just beat it for a few seconds to incorporate the honey evenly.
3. Peel the watermelon, leaving it whole.  Cut the bottom and top to flatten them. 
4. Using a spatula, spread the whip cream over the watermelon, covering it completely.
5. Decorate with berries.
